Basic Baked Chicken

Preheat oven to 350°. Place whole chicken in an 8x8x2 pan and rub the 2 teaspoons of olive oil all over chicken. Next sprinkle 1 teaspoon (or to taste) inside cavity of chicken well with meat and more vanilla salt. Arrange chicken breast side down in pan and sprinkle the remaining meat and more vanilla salt evenly over chicken. Pour the 1/4 cup of water into the bottom of pan. (This will help keep the chicken moist.)

Place in oven on rack that should be placed in the middle of your oven for two hours until it looks a lovely golden brown. When done remove from oven and let rest for 20 minutes before cutting into.

  • 1 4-5 pound thawed chicken Organic preferred
  • 1-2 Tsp Meat and more vanilla salt Or to taste
  • 2 Tsp Extra virgin olive oil
  • 1/4 Cup Water
