Honey Glazed Vanilla Carrots


  • 2 pounds of peeled carrots , cut diagonally into two inch pieces
  • 4 tablespoons of butter
  • Caviar from one vanilla bean
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper
  • 2 tablespoons of honey


  1. Preheat your oven to 450 and place butter in a 9x13” pan. Place pan in oven just until the butter melts.

  2. Add the caviar from one vanilla bean and mix into butter (save the vanilla pod for other uses).
  3. Add the carrots, salt and pepper and mix well.
  4. Shake the pan well so carrots are even and cover with foil. Bake for 30 minutes.
  5. After 30 minutes take it out of the oven and mix the carrots around and shake even again.

  6. Drizzle honey over the carrots and return to oven uncovered for about 10 minutes, or until carrots are soft and slightly browned and caramelized, Enjoy!

Note: (Put vanilla bean pod in a Ziploc bag to stay moist till use or closed jar. Both should be kept out of direct sunlight and cold places)
